What goes into an Empire kosher chicken?

Kosher meat and poultry products tend to be expensive, but the chances of a salmonella outbreak - as happened this week at a Cargill turkey plant in Arkansas - are not very high. Empire CEO spokesman Elie Rosenfeld explains how the company does business.
