Is it extra virgin or not? Is it exposed to too much heat or light? Has it been improperly stored? A report by UC Davis researchers finds that almost 70 percent of the oil labeled as extra virgin failed to meet industry and government standards. This would seem to confirm the suspicions of many experts, and it comes just as the federal government rolls out new standards. But the report itself might serve to confuse the issue, both because the sample was small and the findings were inconsistent from store to store. The North American Olive Oil Association, which represents most olive oil importers, disputed the findings, noting that its own testing found problems in only about 1 percent of samples.
